Mr. Ivan Alvarez appointed Director of Culinary Operations and Food & Beverage of Mandarin Oriental, Sanya

Mandarin Oriental, Sanya has announced the appointment of Ivan Alvarez as Director of Culinary Operations and Food & Beverage at their luxury resort on Hainan Island, where he will be leading the colleagues of the culinary and food & beverage team.



A native of Canary Islands, Ivan inherits his passion and talent in cooking from his auntie and brings with him more than 16 years of culinary expertise gained from working in Michelin starred restaurants and five-star hotels worldwide. He began his career journey at the Michelin One-star Restaurant, Las Rejas in Spain. Most notably, Ivan was a part of the renowned Michelin Three-star Restaurant, El Bulli. In additions, with years of rich experience, he successively worked in Spain, France, U.K., Chile, Thailand, Singapore, Maldives and China that held various position with others famed international hotel groups. Ivan joined Mandarin Oriental Hotel Group in 2015 as Executive Sous Chef of Mandarin Oriental, London and promoted to Executive Chef in 2016. Prior to joining at Mandarin Oriental, Sanya, he was the Executive Chef of Mandarin Oriental, Santiago.



“Passion, dedication, consistency and great ingredients are the most important things for cooking”, said by Ivan. He insists on obtaining the freshest, sustainable and seasonal ingredients, and prepares them in the simplest way to sublimate the ingredients themselves. While satisfying the diners’ discerning taste buds, he also bends his efforts to make the diners feel his affection and passion for the delicacy.
